Bigusto snack cake
17/11/2023Bigusto snack cakes are soft treats that combine two different flavors, generally cocoa and vanilla. Here is a basic recipe to start with to make homemade bigusto snack cakes.
Ingredients
- 3 eggs
- 150 g of sugar
- 150 g of all-purpose flour
- 1 packet of baking powder for sweets
- 100 ml of vegetable oil
- 50 ml of milk
- 1 pinch of salt
- 30 g of unsweetened cocoa powder
- 1 teaspoon of vanilla extract
Preparation
- Preheat the oven to 180 °C.
- Separate the yolks from the whites. Whip the whites with a pinch of salt until stiff and set aside.
- In another bowl, beat the egg yolks with the sugar until the mixture is fluffy and frothy.
- Add the oil slowly, continuing to mix, then incorporate the milk and vanilla extract.
- Combine the sieved flour with the baking powder, gently folding it into the mixture with movements from the bottom up to avoid deflating everything.
- Divide the obtained dough into two equal parts. Into one half, fold in the sieved cocoa, mixing carefully.
- Pour the cocoa mixture into a greased and floured (or parchment paper-lined) loaf pan, level it, and then pour the vanilla mixture on top.
- Bake for about 30-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before serving.
