Two-Chocolate Semifreddo

The two-chocolate semifreddo is a delicious spoon dessert that combines the creaminess of ice cream with the variety of flavors given by the two types of chocolate. Here is the recipe to prepare it:

Ingredients

  • 200 g of dark chocolate
  • 200 g of milk chocolate
  • 500 ml of fresh cream for desserts
  • 100 g of icing sugar
  • 4 egg yolks
  • 1 vanilla bean
  • A pinch of salt

Preparation

  1. Begin by melting the two chocolates separately in a double boiler or in the microwave, taking care not to burn them. Then let them cool to room temperature.
  2. Meanwhile, whisk the egg yolks with the icing sugar and the seeds extracted from the vanilla bean. Beat them until you have a frothy and pale mixture.
  3. In another bowl, whip the fresh cream with a pinch of salt until it is very firm.
  4. Divide the whipped cream into two equal parts and gently fold in the melted dark chocolate in one half and the milk chocolate in the other, trying to maintain the soft consistency as much as possible.
  5. Gently combine the yolk and sugar mixture into both chocolate creams with delicate bottom-to-top movements in order to obtain two separate semifreddo mixtures.
  6. Take a loaf pan or a terrine, line it with parchment paper and pour in the dark chocolate mixture first and then the milk chocolate one on top, or alternate them to create a marbled effect.
  7. Let the semifreddo rest in the freezer for at least 4 hours.
  8. Before serving, remove the semifreddo from the freezer and let it temper for about 15 minutes at room temperature. Carefully invert the mold onto a serving dish and remove the parchment paper.
  9. Cut into slices and garnish as desired with chocolate shavings, fresh fruit, or a dusting of cocoa powder.
