Turmeric Steamed Cod with Vegetable Chips
17/11/2023Here is the recipe to prepare a delicious turmeric steamed cod with vegetable chips. I would like to emphasize that I will add an Italian touch to the recipe by using extra virgin olive oil to season both the fish and the vegetables.
Ingredients
- Cod fillets, 4 pieces (about 150-200 grams each)
- Ground turmeric, 1 teaspoon
- Sea salt, to taste
- Black pepper, to taste
- Lemon, 1 (both grated zest and juice)
- Extra virgin olive oil, to taste
- Mixed vegetables for the chips (for example, carrots, zucchini, and sweet potatoes), 2 of each
- Water, as needed
Preparation
- Start by preparing the cod: sprinkle the fillets with salt, pepper, and a bit of ground turmeric on both sides.
- Prepare your steamer: fill a large pot with about 5 cm of water, add the rest of the ground turmeric, and bring to a boil.
- Place the cod in the steamer, cover, and cook for about 8-10 minutes or until the fish becomes opaque and flakes easily with a fork.
- Meanwhile, prepare the vegetable chips: wash and slice the vegetables into thin slices using a mandolin or a sharp knife. Make sure they are of the same thickness for even cooking.
- Arrange the vegetable slices on a baking sheet lined with parchment paper, season with a drizzle of extra virgin olive oil, salt, and pepper, and bake in a preheated oven at 180 °C. Cook until they become crispy, turning occasionally, about 15-20 minutes.
- Remove the vegetable chips from the oven and let them cool.
- Once the cod is cooked, transfer it to a plate, drizzle with lemon juice and grated zest, and a drizzle of extra virgin olive oil.
- Serve the cod accompanied by the crispy vegetable chips.
