Turkey Strips with Olives and Sun-Dried Tomatoes

Ingredients

  • 400g of turkey breast
  • 100g of sun-dried tomatoes in oil
  • 80g of pitted green olives
  • 2 tablespoons of salted capers
  • 1 clove of garlic
  • Extra virgin olive oil (to taste)
  • Salt (to taste)
  • Pepper (to taste)
  • A bunch of fresh parsley
  • A glass of white wine

Preparazione

  1. Start by cutting the turkey breast into strips, not too thin. Set them aside.
  2. Drain the sun-dried tomatoes from their preserving oil, cut them into strips, and set these aside as well.
  3. Rinse the olives and capers under running water to remove excess salt, then roughly chop them.
  4. Take a large frying pan, pour a drizzle of extra virgin olive oil, and lightly fry the whole garlic clove without burning it.
  5. Remove the garlic and add the turkey strips to the pan. Brown the meat well on all sides over medium-high heat until it is nicely golden.
  6. Deglaze with white wine and let the alcohol evaporate.
  7. Add the sun-dried tomatoes, olives, and capers. Mix well and cook for another 5 minutes over medium heat, or until the turkey is tender and the sauce has reduced slightly.
  8. Season with salt and pepper to taste.
  9. Off the heat, sprinkle with chopped fresh parsley.

Serve the turkey strips hot, perhaps accompanied by a side of grilled vegetables or a fresh salad.
