Turkey Strips with Olives and Sun-Dried Tomatoes

Ingredients
- 400g of turkey breast
- 100g of sun-dried tomatoes in oil
- 80g of pitted green olives
- 2 tablespoons of salted capers
- 1 clove of garlic
- Extra virgin olive oil (to taste)
- Salt (to taste)
- Pepper (to taste)
- A bunch of fresh parsley
- A glass of white wine
Preparazione
- Start by cutting the turkey breast into strips, not too thin. Set them aside.
- Drain the sun-dried tomatoes from their preserving oil, cut them into strips, and set these aside as well.
- Rinse the olives and capers under running water to remove excess salt, then roughly chop them.
- Take a large frying pan, pour a drizzle of extra virgin olive oil, and lightly fry the whole garlic clove without burning it.
- Remove the garlic and add the turkey strips to the pan. Brown the meat well on all sides over medium-high heat until it is nicely golden.
- Deglaze with white wine and let the alcohol evaporate.
- Add the sun-dried tomatoes, olives, and capers. Mix well and cook for another 5 minutes over medium heat, or until the turkey is tender and the sauce has reduced slightly.
- Season with salt and pepper to taste.
- Off the heat, sprinkle with chopped fresh parsley.
Serve the turkey strips hot, perhaps accompanied by a side of grilled vegetables or a fresh salad.
