Turkey Straccetti with Cherry Tomatoes
17/11/2023Turkey Straccetti with Cherry Tomatoes is a simple and quick dish to prepare, perfect for a light yet tasty lunch or dinner. Here’s the recipe and how to make it.
Ingredients
- 400g of turkey breast
- 250g of cherry tomatoes
- 2 tablespoons of extra virgin olive oil
- 2 cloves of garlic
- Salt to taste
- Pepper to taste
- A handful of fresh basil
- 1 glass of white wine (optional)
Preparation
-
Start by cutting the turkey breast into strips, meaning thin and elongated pieces.
-
Wash the tomatoes and cut them in half or into quarters depending on their size.
-
In a pan, heat two tablespoons of extra virgin olive oil and add the garlic cloves to flavor the oil. Once golden, remove the garlic.
-
Add the turkey strips to the pan and sauté over high heat until golden brown on both sides.
-
If you decide to use white wine, deglaze the turkey strips with a glass of wine and let the alcohol evaporate before continuing.
-
Lower the heat and add the cut cherry tomatoes, salt, and pepper. Cover with a lid and cook for about 10 minutes, until the tomatoes have softened slightly but are still firm.
-
At the end of cooking, add a handful of torn fresh basil to enhance the aroma.
-
Plate the turkey strips with the cherry tomatoes and serve immediately, accompanied by a light side dish such as a fresh green salad or steamed vegetables.
Curiosity
Straccetti, meaning “hand-torn pieces” in Roman dialect, is a versatile dish accessible to everyone: in Italian cuisine, the technique of “tearing” the meat to reduce it into smaller pieces that cook quickly is often used to create delightful recipes in very little time.
