Turkey Stew

Turkey stew is a delicious and light dish, perfect for a nourishing meal. Here is the recipe with an Italian touch.

Ingredients

  • 500 grams of turkey, cut into pieces
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 1 clove of garlic
  • 200 ml of tomato sauce
  • 100 ml of white wine
  • As much chicken or vegetable broth as needed
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Herbs to taste (bay leaves, rosemary, thyme)
  • (Optional) Green or black olives

Preparation

  1. Start with the sofrito: finely chop the onion, carrots, and celery. Heat a drizzle of extra virgin olive oil in a large pan and sauté the chopped vegetables along with the crushed garlic (which you will remove before adding the turkey).

  2. Increase the heat and add the turkey pieces. Brown the turkey well on all sides until it takes on color.

  3. Deglaze with white wine and let the alcohol evaporate over high heat.

  4. Add the tomato sauce, a pinch of salt, pepper, and your favorite herbs. If you wish, you can also add some olives for an extra touch of flavor.

  5. Cover with broth until the meat is well immersed, then lower the heat and let it simmer for about 1 hour or until the turkey becomes tender and the sauce has thickened.

If necessary, add more broth during cooking to prevent the stew from drying out too much. Taste and, if necessary, adjust the seasoning with salt and pepper.

Trivia

Stew is a dish that is often cooked in various ways in different Italian regions. In some versions, diced potatoes or other seasonal vegetables are added to make the dish even more substantial. Depending on regional preferences, the stew can be accompanied by polenta, pilaf rice, or even simple homemade bread to mop up the sauce.
