Turkey Shish Kebab
17/11/2023Here is the recipe for Italian-style Turkey Shish Kebab. Before the recipe, I recommend serving it with a fresh salad and a good glass of rosé wine, which pairs very well with white meat and grilled flavors.
Ingredients
- 500 g of turkey breast
- 2 bell peppers (one red and one yellow)
- 1 large red onion
- 2 zucchinis
- 16 cherry tomatoes
- Marinade:
- 60 ml of extra virgin olive oil
- 1 lemon (juice)
- 2 cloves of garlic, minced
- 1 sprig of rosemary, minced
- 1 teaspoon of dried oregano
- Salt and black pepper to taste
- Wooden or metal skewers
Preparation

Cut the turkey breast into cubes of about 3-4 cm on each side, making sure they’re all more or less the same size for even cooking.

Prepare the marinade by mixing in a bowl the olive oil, lemon juice, minced garlic, rosemary, oregano, and season with salt and pepper.

Put the turkey cubes in the marinade and let them flavor for at least 30 minutes in the refrigerator, stirring occasionally.

In the meantime, cut the bell peppers, red onion, and zucchinis into pieces that can be threaded onto the skewers and mix the cherry tomatoes leaving them whole.

If you’re using wooden skewers, soak them in water for about 20 minutes to prevent burning during cooking.

Assemble the skewers by alternating turkey, bell peppers, onion, zucchinis, and cherry tomatoes.

Preheat a grill or griddle and cook the Shish Kebab for about 10-12 minutes, turning occasionally, until the turkey is golden brown and cooked through.

Drizzle the skewers with a splash of extra virgin olive oil at the end of cooking for a touch of shine and flavor.

Shish Kebab is a dish that originates from Middle Eastern cuisine but is also popular in Turkey and the Balkans. The term “shish” means skewer and “kebab” means roasted meat. In Italy, we can give our touch by using Mediterranean aromatic herbs in the marinade and accompanying the dish with fresh seasonal vegetables.
