Turkey rolls stuffed with Champignon mushrooms

Ingredients
- 4 slices of turkey breast
- 250 g of champignon mushrooms
- 1 clove of garlic
- 4 slices of cooked ham
- 50 ml of dry white wine
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley (optional)
- Grated cheese (e.g., Parmesan, optional)
Preparation
- Start by cleaning the champignon mushrooms: remove the earthy part of the stem and brush off any dirt. Slice them thinly or dice them.
- In a skillet, heat a tablespoon of extra virgin olive oil and sauté a whole clove of garlic. Add the champignon mushrooms and cook until they are golden brown. Season with salt and pepper, and if you like, you can deglaze with a bit of white wine. Once cooked, remove the garlic and set the mushrooms aside.
- Lay out the turkey slices and flatten them slightly with a meat mallet. Season with a bit of salt and pepper.
- On each slice of turkey, place a slice of cooked ham. Then distribute the cooked mushrooms and, if you like, some grated cheese.
- Roll up the turkey slices to form the rolls and secure them with toothpicks or kitchen twine.
- In a skillet, heat the remaining oil and brown the rolls on all sides until they are golden.
- Deglaze with the remaining white wine and let the alcohol evaporate.
- Lower the heat, cover the skillet with a lid, and cook the rolls for about 20 minutes, turning them occasionally. If necessary, add a little water to keep them from drying out too much.
- Once cooked, plate the rolls removing the toothpicks or twine, and garnish with chopped fresh parsley if desired.
