Turkey rolls stuffed with Champignon mushrooms

Ingredients

  • 4 slices of turkey breast
  • 250 g of champignon mushrooms
  • 1 clove of garlic
  • 4 slices of cooked ham
  • 50 ml of dry white wine
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional)
  • Grated cheese (e.g., Parmesan, optional)

Preparation

  1. Start by cleaning the champignon mushrooms: remove the earthy part of the stem and brush off any dirt. Slice them thinly or dice them.
  2. In a skillet, heat a tablespoon of extra virgin olive oil and sauté a whole clove of garlic. Add the champignon mushrooms and cook until they are golden brown. Season with salt and pepper, and if you like, you can deglaze with a bit of white wine. Once cooked, remove the garlic and set the mushrooms aside.
  3. Lay out the turkey slices and flatten them slightly with a meat mallet. Season with a bit of salt and pepper.
  4. On each slice of turkey, place a slice of cooked ham. Then distribute the cooked mushrooms and, if you like, some grated cheese.
  5. Roll up the turkey slices to form the rolls and secure them with toothpicks or kitchen twine.
  6. In a skillet, heat the remaining oil and brown the rolls on all sides until they are golden.
  7. Deglaze with the remaining white wine and let the alcohol evaporate.
  8. Lower the heat, cover the skillet with a lid, and cook the rolls for about 20 minutes, turning them occasionally. If necessary, add a little water to keep them from drying out too much.
  9. Once cooked, plate the rolls removing the toothpicks or twine, and garnish with chopped fresh parsley if desired.
