Turkey Rollè

Turkey rollè is a tasty and quite versatile dish. Here is a basic recipe for preparing Italian-style turkey rollè that you can customize to your taste.

Ingredients

  • 4 slices of turkey breast
  • 100 g of sliced cured ham
  • 100 g of sliced cheese (provolone, scamorza, or other melting cheese)
  • Sage
  • Rosemary
  • Extra virgin olive oil
  • Salt and pepper
  • White wine for deglazing
  • Kitchen twine or toothpicks to secure

Preparation

  1. Spread out the turkey breast slices and make sure they’re thin enough. If necessary, lightly pound them with a meat tenderizer between two sheets of cling film.
  2. Season the turkey slices with salt and pepper to taste.
  3. On each slice of turkey, place a slice of cured ham and one of cheese, adding some sage leaves as well.
  4. Roll up the turkey slices with the filling inside, forming rollès. Secure the rollès with kitchen twine or toothpicks.
  5. In a large skillet, heat a drizzle of extra virgin olive oil and brown the rollès on all sides until golden.
  6. Deglaze with a bit of white wine and let it evaporate.
  7. Add a sprig of rosemary, lower the heat, cover with a lid, and cook for about 15-20 minutes. If necessary, add a little water during cooking to prevent the rollès from drying out.
  8. Once cooked, remove the twine or toothpicks and serve the rollès, which can be sliced or served whole.
