Turkey Tenderloin with its Mayonnaise

Ingredients
For the turkey tenderloin:
- 4 slices of turkey tenderloin (about 150-200 g each)
- Extra virgin olive oil
- Salt and pepper to taste
- Aromatic herbs to taste (rosemary, sage, thyme)
- Garlic (optional)
For the mayonnaise:
- 1 room temperature egg yolk
- 150 ml of sunflower oil or extra virgin olive oil
- 1 tablespoon of lemon juice or white wine vinegar
- Salt to taste
- Pepper to taste (optional)
Preparation
Turkey tenderloin:
- Take the turkey tenderloin slices and pat them dry with kitchen paper if necessary.
- Massage the slices with a drizzle of extra virgin olive oil, salt, pepper, and finely chopped aromatic herbs. If you like, you can also add a little crushed garlic.
- Let them marinate for about 15-30 minutes at room temperature to flavor them well.
- Heat a non-stick pan and, once it’s hot, place the turkey slices in it. Cook them for about 3-4 minutes per side, until they are well browned and cooked to perfection.
Mayonnaise:
- In a bowl, place the egg yolk and begin to beat it with a hand whisk or an immersion blender.
- Add the oil in a very slow stream, continuing to beat without stopping, to emulsify the mixture. It’s very important to proceed slowly so as not to “curdle” the mayonnaise.
- When the mayonnaise begins to thicken, add the lemon juice (or vinegar), salt, and pepper, continuing to whisk until you achieve the desired consistency.
Serve the slices of turkey accompanied by the homemade mayonnaise.
