Turkey Silverside with Artichoke and Lemon Sauce

I offer you the recipe for a delicious turkey silverside with artichoke and lemon sauce, with a small Italian twist in case some elements are not already present in your pantry.

Ingredients

  • 4 slices of turkey silverside (about 150-200g each)
  • 200g of artichoke hearts (fresh or frozen)
  • 1 lemon (juice and grated zest)
  • 2 cloves of garlic
  • 1 sprig of rosemary
  • 1 glass of dry white wine
  • Flour as needed to flour the meat
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • Vegetable or chicken broth as needed

Preparation

  1. Start by cleaning the artichoke hearts and cutting them into wedges. If using fresh artichokes, remove the tougher outer leaves, cut off the tips, and take out the “beard” inside, then soak them in water with a bit of lemon juice to prevent browning. If using frozen artichokes, thaw them and drain well.

  2. Lightly flour the turkey silversides, then shake off the excess flour. In a large skillet, heat a drizzle of extra virgin olive oil and sauté the whole garlic and rosemary to flavor the oil.

  3. Add the turkey silversides and brown them on both sides. Season with salt and pepper to taste.

  4. Once the silversides are browned, remove the rosemary and garlic, add the artichokes to the pan and let them cook for a few minutes.

  5. Deglaze with white wine and let the alcohol evaporate over high heat.

  6. Add the lemon juice and some grated zest, then lower the heat and continue cooking, adding broth occasionally to prevent the sauce from drying out too much, until the meat and artichokes are tender.

  7. Taste and adjust the seasoning with salt and pepper if necessary. The sauce will thicken slightly, binding all the flavors together.

  8. Once ready, place the turkey silversides on a serving dish and cover with the artichoke and lemon sauce. Serve hot.
