Turkey Thigh in Salad

Here’s a simple and tasty recipe to prepare turkey thigh in salad, with an Italian twist.

Ingredients

  • 400 grams of turkey thigh
  • Salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • 1 sprig of rosemary (optional)
  • Mixed salad greens (lettuce, arugula, radicchio, etc.)
  • Cherry tomatoes
  • 1/2 red onion
  • Balsamic vinegar to taste
  • Juice of 1 lemon

Preparation

  1. Start by seasoning the turkey thigh with salt, pepper, a drizzle of extra virgin olive oil, finely chopped garlic, and rosemary. Let the meat marinate for at least 30 minutes.
  2. Cook the turkey thigh in a well-heated pan with a drizzle of extra virgin olive oil. Cook for about 5-7 minutes on each side, until it’s golden on the outside and cooked to the desired doneness on the inside. Remember that cooking times may vary depending on the thickness of the thigh.
  3. Meanwhile, wash and dry the mixed salad greens, and slice the cherry tomatoes and red onion.
  4. Assemble the salad in a large bowl, combining the vegetables.
  5. Once the turkey thigh is cooked, let it rest for a few minutes and then slice it into thin strips.
  6. Distribute the turkey slices on top of the salad.
  7. Dress the salad with an emulsion of extra virgin olive oil, balsamic vinegar, lemon juice, salt and pepper, and pour the dressing over the salad with the turkey thigh.
  8. Gently mix the salad before serving to ensure all the ingredients are well combined with the dressing.
