Turkey bites with bacon

Turkey and bacon bites are a tasty and fairly simple second course to prepare. Here’s how to do it:

Ingredients

  • 500 grams of turkey breast
  • 150 grams of sliced bacon
  • Sage (a few leaves)
  • Rosemary (1 sprig)
  • Garlic (1 clove)
  • White wine (half a glass)
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Cutting the turkey: Start by cutting the turkey breast into cubes or strips, depending on your preference, trying to maintain uniform sizes for even cooking.

  2. Wrapping with bacon: Wrap each turkey bite with a slice of bacon, securing it with a toothpick. If you wish, you can insert a sage leaf between the turkey and the bacon to increase the aroma.

  3. Browning: Heat a drizzle of extra virgin olive oil in a large pan. Add a clove of garlic and a sprig of rosemary to flavor the oil. After a few minutes, remove the garlic and rosemary and lay the turkey bites in the pan.

  4. Cooking: Brown the bites on all sides until the bacon becomes crispy. At this point, deglaze with the white wine and allow the alcohol to evaporate. Lower the heat, cover with a lid, and let cook for about 15 minutes, turning the bites occasionally. Season with salt and pepper.

  5. Finishing: Once the turkey bites are cooked evenly, remove them from the pan and serve them hot.

Curiosity

Turkey and bacon bites can be enriched with a variety of side dishes, such as grilled vegetables or a fresh salad. The bacon rolled around the turkey not only adds flavor but also helps keep the meat tender and juicy during cooking. This dish can afford a generous use of aromatic herbs, so don’t hesitate to experiment with thyme, marjoram, or other herbs you prefer.
