Tuna Meatloaf

Tuna meatloaf is a simple but very tasty dish, perfect to serve either hot or cold. Here is the recipe with a little Italian touch in the preparation.

Ingredients

  • 400 g of drained canned tuna
  • 100 g of breadcrumbs
  • 2 eggs
  • 1 bunch of chopped parsley
  • 50 g of grated Parmesan cheese
  • 1 clove of minced garlic (optional)
  • Salt and pepper to taste
  • 2 tablespoons of salted capers (rinsed and chopped)
  • Pitted green olives to taste
  • Extra virgin olive oil

Preparation

  1. Drain the tuna well and place it in a large bowl.
  2. Add the breadcrumbs, eggs, chopped parsley, Parmesan, garlic (if you like), chopped capers, and olives cut into pieces. Season with salt and pepper.
  3. Mix all the ingredients well until you have a homogeneous mixture. If it seems too dry, you can add a drizzle of extra virgin olive oil or a bit of milk to soften.
  4. Take a sheet of parchment paper and lay the tuna mixture on top, shaping it into a meatloaf.
  5. Bake in a preheated oven at 180 °C for about 30-40 minutes, until the outside is golden brown.
  6. Once cooked, let it cool a bit before slicing. You can serve the meatloaf hot, or let it cool completely and enjoy it cold.

Tuna meatloaf is a variant of the classic meatloaf and lends itself to many variations: some recipes include vegetables inside the mixture or on a side sauce.
