Tuna Fillet in Walnut and Pistachio Crust

The tuna fillet in walnut and pistachio crust is a refined dish where the sweetness of the dried fruits balances the strong flavor of the tuna. Here’s how to prepare it.

Ingredients

  • 4 tuna fillets, 200 g each
  • 100 g of shelled walnuts
  • 100 g of shelled and unsalted pistachios
  • 2 sprigs of fresh rosemary
  • Salt and pepper to taste
  • Extra virgin olive oil

Preparation

  1. Preheat the oven to 200 °C.
  2. Coarsely chop the walnuts and pistachios. You can do this with a knife or using a food processor, but be careful not to turn them into flour. The ideal is to obtain pieces that give the crust crunchiness.
  3. Rub the tuna fillets with a drizzle of oil and then with salt and pepper.
  4. Place the tuna fillets on a cutting board and cover one side with the walnut and pistachio mixture, pressing lightly with your hands to make sure the crust sticks well.
  5. Transfer the fillets to a baking tray lined with parchment paper and sprinkle some rosemary leaves and a drizzle of oil on top.
  6. Bake in the oven for about 7-10 minutes, depending on the thickness of the tuna and how you prefer it cooked (rare or well done).
  7. Serve the tuna fillet in walnut and pistachio crust hot, perhaps accompanied by a light side dish such as a fresh salad or grilled vegetables.
