Tuna Fillet in Walnut and Pistachio Crust

Ingredients
- 4 tuna fillets, 200 g each
- 100 g of shelled walnuts
- 100 g of shelled and unsalted pistachios
- 2 sprigs of fresh rosemary
- Salt and pepper to taste
- Extra virgin olive oil
Preparation
- Preheat the oven to 200 °C.
- Coarsely chop the walnuts and pistachios. You can do this with a knife or using a food processor, but be careful not to turn them into flour. The ideal is to obtain pieces that give the crust crunchiness.
- Rub the tuna fillets with a drizzle of oil and then with salt and pepper.
- Place the tuna fillets on a cutting board and cover one side with the walnut and pistachio mixture, pressing lightly with your hands to make sure the crust sticks well.
- Transfer the fillets to a baking tray lined with parchment paper and sprinkle some rosemary leaves and a drizzle of oil on top.
- Bake in the oven for about 7-10 minutes, depending on the thickness of the tuna and how you prefer it cooked (rare or well done).
- Serve the tuna fillet in walnut and pistachio crust hot, perhaps accompanied by a light side dish such as a fresh salad or grilled vegetables.
