Tuna Burgers with Orange and Ginger

Here’s the recipe for succulent tuna burgers with orange and ginger, with an Italian twist.

Ingredients

  • 400 grams of fresh tuna
  • 2 oranges (juice and grated zest)
  • 1 tablespoon of freshly grated ginger
  • 2 tablespoons of breadcrumbs (you could use Italian breadcrumbs for extra crunchiness)
  • 1 egg
  • Chopped fresh parsley to taste
  • Salt and pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by finely chopping the fresh tuna, making sure to remove any tough or grey parts.
  2. In a large bowl, combine the chopped tuna, grated zest and juice of one orange, freshly grated ginger, breadcrumbs, and an egg. Mix well to blend all the ingredients.
  3. Add chopped parsley, salt and pepper to taste, and mix again.
  4. Shape the mixture into burgers and let them rest in the refrigerator for about 30 minutes, so they set well.
  5. Heat a drizzle of extra virgin olive oil in a pan and cook the tuna burgers over medium-high heat for about 2-3 minutes per side, or until they are golden brown and cooked to your liking.
  6. Serve them hot, accompanied if you like by a sauce made of Greek yogurt, orange zest, a pinch of salt, and a few drops of orange juice.
