Rice and Tuna Patties

Rice and tuna patties are a simple and delicious dish that can be served as an appetizer or as a light main course. Here is the recipe to prepare delicious patties:

Ingredients

  • 200 g of rice
  • 200 g of natural canned tuna
  • 2 eggs
  • 50 g of grated Parmesan cheese
  • Chopped fresh parsley (to taste)
  • Salt and pepper (to taste)
  • Breadcrumbs (for breading)
  • Olive oil (for frying)

Preparation

  1. First, cook the rice in lightly salted water following the times indicated on the package, so it is al dente.
  2. Drain the rice well and let it cool.
  3. Meanwhile, drain the tuna and roughly mash it with a fork to make it more workable.
  4. In a large bowl, mix the cooked rice with the tuna, eggs, grated Parmesan, chopped parsley, salt, and pepper to taste.
  5. Form small patties with the mixture, pressing well with your hands to make them adhere.
  6. Coat the patties in breadcrumbs until evenly covered.
  7. In a frying pan, heat plenty of olive oil and fry the patties until they are evenly golden brown on both sides.
  8. Let the patties drain on paper towels to remove excess oil.
  9. Serve the patties hot or at room temperature, as you prefer.

If you prefer a lighter version, you can bake the rice and tuna patties in the oven, placing them on a baking sheet lined with parchment paper and cooking them at 180 °C for about 20 minutes or until the desired golden brown color is achieved.
