Tuna and Olive Meatloaf
17/11/2023I will be pleased to outline the recipe for the tuna and olive meatloaf, a dish full of flavor and easy to prepare! This variant can be considered a more Mediterranean twist on the classic meatloaf.
Ingredients
- 400 g of canned tuna in oil, drained
- 100 g of breadcrumbs
- 2 eggs
- 50 g of pitted green olives
- 50 g of pitted black olives
- 1 tablespoon of desalted capers
- Chopped fresh parsley
- Salt and pepper to taste
- 1 tablespoon of lemon juice (optional)
- Extra virgin olive oil for brushing
Preparation

In a food processor, finely chop the olives along with the capers and a bit of fresh parsley. If you don’t have a processor, you can finely chop everything by hand with a knife.

In a large bowl, combine the drained tuna, the olive, caper, and parsley mixture, breadcrumbs, and eggs. Add a pinch of salt and pepper to taste. If you like, you can also add a tablespoon of lemon juice to add a touch of freshness.

Mix all the ingredients until you have a homogeneous mixture. If the mixture seems too dry, you can add a bit of extra virgin olive oil or another egg. If it’s too moist, add more breadcrumbs until you reach the desired consistency.

Take the mixture and form a meatloaf to the shape and size you prefer. You can use a bit of olive oil on your hands to prevent sticking.

Preheat the oven to 180°C (static mode).

Place the meatloaf on a baking tray lined with parchment paper and brush it with some extra virgin olive oil.

Bake the meatloaf for about 30-40 minutes, or until it is golden brown on the outside. Cooking time may vary depending on the size of the meatloaf.

Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before cutting.
The tuna and olive meatloaf is excellent either warm or at room temperature and is perfect to serve with a light side dish such as a green salad or grilled vegetables.
