Tuber chips and ginger mayonnaise

Ingredients for the Tuber Chips:

  • Sunflower seed oil, about 200 ml

Preparation

Tuber Chips:

  1. Begin by cleaning the tubers well. Peel the sweet potato, parsnip, and beetroot.
  2. Using a mandoline or a sharp knife, slice the tubers very thinly to obtain thin chips.
  3. Immerse the slices in cold water for a few minutes to remove excess starch and dry them well with kitchen paper.
  4. Heat the seed oil in a deep pan or a fryer to about 180°C.
  5. Fry the chips in small quantities to prevent them from sticking to each other, until they become crispy and lightly golden.
  6. Drain them on paper towels and season with salt and pepper as you like.

Ginger Mayonnaise:

  1. Grate the fresh ginger and set aside.
  2. In a blender, combine the egg with a pinch of salt and a few teaspoons of lemon juice.
  3. Start blending and add the sunflower seed oil in a stream until you see the mayonnaise begin to form.
  4. Once the desired consistency is achieved, add the grated ginger and blend a little more to distribute it well.
  5. Taste and adjust for salt or lemon if necessary.

Serve your tuber chips still warm with the ginger mayonnaise on the side. It will be a great idea for an original aperitif or as an alternative snack on any occasion.
