Truffle-stuffed onions

Truffle-stuffed onions are a rich and elegant dish, perfect for impressing your guests with a refined recipe. Here’s how to prepare them:

Ingredients

  • 4 large onions
  • 30 g of black truffle
  • 100 g of stale bread
  • 50 g of grated Parmesan cheese
  • 1 egg
  • 100 ml of vegetable broth
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by carefully peeling the onions, then cut off the top and hollow them out with the help of a teaspoon; try to remove only the necessary amount of inner layers to obtain an “onion cup” to fill, leaving at least two-three outer layers intact.
  2. Cook the hollowed onions in boiling salted water for about 10-15 minutes, then drain and let them cool.
  3. In the meantime, finely chop the truffle and stale bread.
  4. In a bowl, mix the chopped bread and truffle with the egg, Parmesan, salt, and pepper until you have a homogeneous mixture. If necessary, add a little broth to soften the mixture.
  5. Fill the onions with this mixture, and place them in a lightly oiled baking dish.
  6. Pour the vegetable broth into the baking dish until about 1/3 of the height of the onions.
  7. Bake at 180 °C for about 30 minutes or until the onions are golden and soft to the fork.
  8. If you wish, you can finish cooking with a few minutes under the grill to gratinate the top of the stuffed onions.
  9. Serve hot, perhaps accompanied by a fresh salad or a side of vegetables.
