Fettuccine with Truffle

Fettuccine with truffle is a delicacy of Italian cuisine, where the flavor and aroma of truffle marry perfectly with fresh pasta. Here’s how to prepare them:

Ingredients

  • 250g of fresh fettuccine
  • 1-2 fresh truffles depending on size or high-quality truffle cream or flakes
  • 2 tablespoons of butter
  • 1 clove of garlic
  • Grated Parmigiano-Reggiano (optional)
  • Salt
  • Black pepper

Preparation

  1. In a large pan, heat the butter over medium heat and add the crushed garlic clove to flavor the butter. Remove it as soon as it turns color.
  2. Meanwhile, bring a pot of salted water to a boil and cook the fettuccine following the instructions to get al dente pasta. Drain, reserving some of the cooking water.
  3. Transfer the drained fettuccine to the pan with the flavored butter, add a sprinkling of pepper, and sauté briefly to flavor the pasta.
  4. Add a little cooking water if the pasta seems too dry.
  5. Serve immediately with grated fresh truffle flakes on top or, if using high-quality truffle in cream or flakes, mix gently with the fettuccine.
  6. (Optional) Add a handful of grated Parmigiano-Reggiano for extra creaminess.
