Ingredients

  • 4 trout fillets (about 150-200 grams each)
  • The juice of 1 lemon
  • Grated zest of 1 lemon (untreated)
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • Flour, as needed for dusting the fillets

Preparation

  1. Start by washing the trout fillets under cold running water, then pat them dry with paper towels.
  2. Prepare a marinade by mixing lemon juice, grated zest, a tablespoon of extra virgin olive oil, salt, and pepper in a wide bowl.
  3. Dip the trout fillets in the marinade, making sure they are well covered, and let them rest for about 20-30 minutes in the refrigerator.
  4. In the meantime, spread a layer of flour on a plate.
  5. After marinating, dust the trout fillets with the flour, ensuring that they are evenly coated.
  6. Heat the remaining extra virgin olive oil in a non-stick pan over medium heat.
