Tropical coconut, banana, and kiwi sweets

Tropical coconut, banana, and kiwi sweets are a fresh, colorful and pleasantly summer dessert. Here is an Italian version of this exotic recipe:

Ingredients

  • 150 g of coconut flour (dehydrated shredded coconut)
  • 2 ripe bananas
  • 2 kiwis
  • 50 g of brown sugar
  • 2 eggs
  • 50 ml of coconut oil (or vegetable oil)
  • 1 packet of baking powder
  • Juice of 1/2 lemon
  • A pinch of salt

Preparation

  1. Preheat the oven to 180°C.
  2. In a bowl, mash the bananas with a fork until you get a smooth consistency.
  3. Add the brown sugar, eggs, coconut oil, and lemon juice to the mashed bananas. Mix well until you have a smooth mixture.
  4. In another bowl, mix the coconut flour with the baking powder and a pinch of salt.
  5. Combine the dry ingredients with the banana mixture and stir until uniform.
  6. Peel the kiwis and cut them into small cubes, then gently fold them into the batter.
  7. Line muffin or sweet molds with paper liners, or grease and flour if they are silicone or metal.
  8. Fill them with the batter, making sure to evenly distribute the kiwi pieces.
  9. Bake in the oven for about 20-25 minutes, or until the sweets are nicely golden and a toothpick comes out clean.
  10. Let cool before serving.
