Trofie with Artichokes

Here is a simple and tasty recipe to prepare Trofie with Artichokes. Before starting, make sure you have all the necessary ingredients. Here’s what you’ll need:

Ingredients

  • 320 g of trofie (or another type of short pasta if you prefer)
  • 4 artichokes
  • 2 cloves of garlic
  • Fresh parsley to taste
  • 1 lemon
  • 80 g of grated Parmesan cheese
  • Extra virgin olive oil to taste
  • Salt and pepper to taste

Preparation

  1. Start by cleaning the artichokes: remove the outer hard leaves, cut away the thorny tips, and remove the inner hay if present. Cut the artichokes into wedges and put them in a bowl of water with lemon juice to prevent them from darkening.
  2. Bring a pot of salted water to a boil for the pasta.
  3. In the meantime, in a large skillet, heat a drizzle of extra virgin olive oil and add the garlic cloves to brown them. Once golden, remove them and add the well-drained artichokes from the lemon water.
  4. Sauté the artichokes for about 10 minutes until they are tender, then season with salt and pepper.
  5. When the water boils, cook the trofie (or the pasta you have chosen) following the cooking times indicated on the package.
  6. Drain the pasta, keeping aside some of the cooking water. Transfer the trofie to the skillet with the artichokes and mix everything together, adding a little cooking water if necessary to make the sauce creamier.
  7. Add chopped fresh parsley and Parmesan, stirring well.
  8. Serve the trofie with artichokes hot, with an additional sprinkle of Parmesan and a raw drizzle of extra virgin olive oil if you wish.
