Trofie with Artichokes

Ingredients
- 320 g of trofie (or another type of short pasta if you prefer)
- 4 artichokes
- 2 cloves of garlic
- Fresh parsley to taste
- 1 lemon
- 80 g of grated Parmesan cheese
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- Start by cleaning the artichokes: remove the outer hard leaves, cut away the thorny tips, and remove the inner hay if present. Cut the artichokes into wedges and put them in a bowl of water with lemon juice to prevent them from darkening.
- Bring a pot of salted water to a boil for the pasta.
- In the meantime, in a large skillet, heat a drizzle of extra virgin olive oil and add the garlic cloves to brown them. Once golden, remove them and add the well-drained artichokes from the lemon water.
- Sauté the artichokes for about 10 minutes until they are tender, then season with salt and pepper.
- When the water boils, cook the trofie (or the pasta you have chosen) following the cooking times indicated on the package.
- Drain the pasta, keeping aside some of the cooking water. Transfer the trofie to the skillet with the artichokes and mix everything together, adding a little cooking water if necessary to make the sauce creamier.
- Add chopped fresh parsley and Parmesan, stirring well.
- Serve the trofie with artichokes hot, with an additional sprinkle of Parmesan and a raw drizzle of extra virgin olive oil if you wish.
