Triple Chocolate Cheesecake

Ingredients

For the base:
- 200 g of chocolate cookies
 - 100 g of melted butter
 
 - 
For the cream:
- 300 g of white chocolate
 - 300 g of milk chocolate
 - 300 g of dark chocolate
 - 500 g of cream cheese (such as Philadelphia)
 - 200 g of powdered sugar
 - 500 ml of whipping cream
 
 - 
For the decoration:
- Chocolate shavings or melted chocolate
 - Fruit of your choice (for example, raspberries or strawberries)
 
 
Preparation
- Start by crushing the cookies until you get a coarse flour, then mix with the melted butter. Spread the mixture into a springform pan, pressing well to create a firm base, and refrigerate for about 30 minutes to set.
 - Melt the three types of chocolate separately, taking care to do so in a double boiler or in the microwave with caution to avoid burning them. Let cool slightly.
 - In a large bowl, mix the cream cheese with the powdered sugar until you obtain a smooth mixture.
 - Divide the cream cheese mixture into three equal parts and add the melted chocolate (white, milk, and dark) to each part, mixing until each cream is homogeneous.
 - In another bowl, whip the cream until it reaches a firm consistency, then equally divide it among the three chocolate creams, gently folding it in with an upward motion.
 - Pour the white chocolate cream over the cookie base, leveling it well, and freeze for 10 minutes so that it sets a little. Repeat the process with the milk chocolate cream and, finally, with the dark chocolate cream, allowing to set in the freezer between each layer.
 - Once all the layers have been added, refrigerate the cheesecake for at least 4 hours, or until completely set.
 - Before serving, decorate with chocolate shavings or melted chocolate and, if you wish, add some fresh fruit on the surface.
