Tricolor potato delights

Tricolor potato delights are a colorful and festive variation of the classic potato gnocchi. Let’s see together how to prepare them.

Ingredients

  • 500 g of floury potatoes
  • 150 g of type 00 soft wheat flour, plus additional for processing
  • 1 large egg
  • Salt to taste
  • For the green delights: fresh spinach or a bit of pesto
  • For the red delights: tomato paste or boiled beetroot

Preparation

  1. Start by boiling the potatoes with their skins on in salted water until they are soft. Be careful not to let them burst to prevent them from absorbing water.
  2. Meanwhile, prepare the natural colorings for the tricolor delights. For green, boil the spinach, squeeze it out well and chop it finely or, if you prefer, use a bit of ready-made pesto. For red, you can use tomato paste or previously boiled and blended beetroot to obtain a puree.
  3. Once cooked, drain the potatoes and peel them while still hot. Mash them with a potato masher, collecting the puree in a bowl.
  4. Add a pinch of salt to the puree and let it cool slightly before adding the egg and flour. Mix to start forming the dough.
  5. Divide the dough into three equal parts. To one part add the spinach or pesto to get green delights, and to another add the tomato paste or beetroot puree for the red delights.
  6. Work each portion of dough, incorporating more flour if necessary until achieving a soft but non-sticky consistency. Not all the flour listed in the ingredients may be needed: the important thing is to get a manageable dough.
  7. Divide each portion of colored dough into logs and cut them into chunks to form the delights.
  8. If you wish, you can score them with a fork or with the special gnocchi tool.
  9. Cook the delights in plenty of salted water and remove them with a slotted spoon as they float to the surface.
  10. Dress them with the sauce of your choice and serve immediately.
