Potato Dumplings with Smoked Salmon and Zucchini Blossoms

Ingredients

  • 300 g of potato dumplings (small gnocchi)
  • 200 g of smoked salmon
  • 6-8 zucchini blossoms
  • 2 medium zucchinis
  • 1 shallot
  • 200 ml of cooking cream or fresh liquid cream
  • Salt and pepper to taste
  • Extra virgin olive oil
  • A sprig of fresh dill (optional)
  • Grated zest of 1 organic lemon (for a touch of freshness)

Preparation

  1. Begin by gently washing the zucchinis and zucchini blossoms. Cut the zucchinis into thin slices or small cubes, and chop the zucchini blossoms into strips, removing any pistils or hard internal parts.

  2. Finely chop the shallot and let it wilt in a pan with a drizzle of extra virgin olive oil. Add the zucchinis and sauté everything for a few minutes until the zucchinis start to soften.

  3. Cut the smoked salmon into strips and add it to the zucchinis, letting it flavor for a couple of minutes. Now add the lemon zest and the zucchini blossoms, being careful not to overcook them. Mix gently.

  4. Pour the cream into the pan, seasoning with salt and pepper as you like. Let it cook on low heat to thick slightly the sauce.

  5. Meanwhile, cook the potato dumplings in plenty of salted water following the instructions on the package, they are usually ready when they float to the top.

  6. Drain the dumplings and transfer them to the pan with the salmon and zucchini topping. Toss everything together for a few minutes so the flavors blend well.

  7. Serve immediately, garnishing with chopped fresh dill and an additional sprinkle of pepper, if desired.
