Tortillas with Spiced Pork and Yogurt Guacamole
17/11/2023Here is a version of the tortilla recipe with spiced pork and a guacamole enriched with yogurt that can give a creamy and slightly sour touch, in an all-Italian style, where extra virgin olive oil and the wise use of aromatic herbs are always protagonists.
Ingredients for the spiced pork:
- 500 g of pork loin
- 1 tablespoon of paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- 1 teaspoon of chili powder (optional)
- 1 clove of garlic, chopped
- Salt and pepper to taste
- 2 tablespoons of extra virgin olive oil
Ingredients for the yogurt guacamole:
- 2 ripe avocados
- 1/2 red onion, finely chopped
- 1 tomato, deseeded and diced
- 1 tablespoon of chopped fresh cilantro (or parsley if you prefer)
- Juice of 1 lime
- 2 tablespoons of Greek yogurt (or 100% natural yogurt)
- Salt and pepper to taste
- Extra virgin olive oil
Other ingredients:
- Flour or corn tortillas as preferred
- Leafy green salad for serving
- Grated cheese (optional)
Preparation
For the spiced pork:
- Cut the pork loin into strips.
- In a bowl, mix the paprika, cumin, oregano, chili, garlic, salt, and pepper.
- Coat the meat in the spice mixture and let it marinate for at least 15 minutes.
- Heat the oil in a pan over medium-high heat and cook the pork until it is golden brown and cooked through.
For the yogurt guacamole:
- Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon.
- In a bowl, mash the avocado with a fork to the desired consistency - it can be chunky with pieces or smoother and creamier.
- Add the chopped red onion, tomato, cilantro (or parsley), lime juice, and yogurt. Season with salt, pepper, and a drizzle of extra virgin olive oil and mix well.
To assemble the tortillas:
- Warm the tortillas following the instructions on the package.
- Place some of the spiced pork, yogurt guacamole, and if desired, some green leaves and a bit of grated cheese in the center of each tortilla.
- Fold or roll the tortillas to your liking.

Tortillas are a staple of Mexican cuisine, but here we’ve given it an all-Italian twist with the addition of extra virgin olive oil and Greek yogurt to the traditional guacamole, increasing its creaminess and adding a pleasant sour note.
