Tortillas with Spiced Pork and Yogurt Guacamole

Here is a version of the tortilla recipe with spiced pork and a guacamole enriched with yogurt that can give a creamy and slightly sour touch, in an all-Italian style, where extra virgin olive oil and the wise use of aromatic herbs are always protagonists.

Ingredients for the spiced pork:

  • 500 g of pork loin
  • 1 tablespoon of paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1 teaspoon of chili powder (optional)
  • 1 clove of garlic, chopped
  • Salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil

Ingredients for the yogurt guacamole:

  • 2 ripe avocados
  • 1/2 red onion, finely chopped
  • 1 tomato, deseeded and diced
  • 1 tablespoon of chopped fresh cilantro (or parsley if you prefer)
  • Juice of 1 lime
  • 2 tablespoons of Greek yogurt (or 100% natural yogurt)
  • Salt and pepper to taste
  • Extra virgin olive oil

Other ingredients:

  • Flour or corn tortillas as preferred
  • Leafy green salad for serving
  • Grated cheese (optional)

Preparation

For the spiced pork:

  1. Cut the pork loin into strips.
  2. In a bowl, mix the paprika, cumin, oregano, chili, garlic, salt, and pepper.
  3. Coat the meat in the spice mixture and let it marinate for at least 15 minutes.
  4. Heat the oil in a pan over medium-high heat and cook the pork until it is golden brown and cooked through.

For the yogurt guacamole:

  1. Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon.
  2. In a bowl, mash the avocado with a fork to the desired consistency - it can be chunky with pieces or smoother and creamier.
  3. Add the chopped red onion, tomato, cilantro (or parsley), lime juice, and yogurt. Season with salt, pepper, and a drizzle of extra virgin olive oil and mix well.

To assemble the tortillas:

  1. Warm the tortillas following the instructions on the package.
  2. Place some of the spiced pork, yogurt guacamole, and if desired, some green leaves and a bit of grated cheese in the center of each tortilla.
  3. Fold or roll the tortillas to your liking.
