Tortillas with Meat and Vegetables

I will be delighted to assist you in preparing some delicious tortillas with meat and vegetables with an Italian twist. Normally, tortillas are a typical Mexican dish; however, we can enhance the filling with vegetables and Italian-style seasonings for a unique flavor.

Ingredients

  • 4 corn or wheat tortillas
  • 300g of beef cut into strips (like the ones for fajitas)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 red onion
  • 2 cloves of garlic
  • 100g of champignon mushrooms
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated cheese (pecorino or parmesan for an Italian touch)
  • Dried or fresh oregano to taste
  • Tomato sauce to taste (for an Italian variant, you can also add some tomato purée seasoned with basil, salt, and a drizzle of oil)

Preparation

  1. Cut the meat into strips about 1 cm wide and then slice the vegetables to get similar strips.
  2. Heat a drizzle of oil in a wide pan and sauté the crushed garlic. Add the meat and brown it until well golden. Remove the meat from the pan and set aside.
  3. In the same pan, add the sliced onions and let them soften.
  4. Add the bell peppers and zucchini and cook until they are tender but still crunchy. Add the sliced mushrooms and continue cooking.
  5. Put the meat back in the pan with the vegetables, add salt, pepper, and oregano to taste. If desired, you can add the tomato purée and let it cook for another 5 minutes, to further flavor the mixture.
  6. Meanwhile, heat the tortillas in another pan or in the microwave, following the instructions on the package, so that they become soft and flexible.
  7. Place some of the meat and vegetable filling in the center of each tortilla, sprinkle with grated cheese, and then wrap the tortillas like a burrito or fold them in half to form fajitas.
  8. Finally, if desired, you can bake the stuffed tortillas in the oven for a few minutes to melt the cheese or serve them as they are.

Curiosity

In Italy, we might consider tortillas as piadine, which can be stuffed in a very similar way. In the Italian version of the tortillas with meat and vegetables, I suggested using Italian grated cheese and flavoring with tomato purée and oregano to give a Mediterranean and distinctive touch to the dish.
