Chicken pie

Ingredients

  • 500 g of chicken breast
  • 1 onion
  • 2 carrots

Preparation

  1. Prepare the chicken: cut the chicken breast into uniformly sized cubes. Season lightly with salt and pepper.
  2. In a large skillet, melt the butter and sauté the chopped onion until it becomes translucent. Add the chopped garlic and rosemary (or sage) and let it flavour for a couple of minutes.
  3. Add the chicken cubes and brown them on all sides. Then, set the chicken aside.
  4. In the same skillet, add the sliced carrots and peas. Let them cook for about 5 minutes.
  5. Now add the flour to the sauté, stirring well for a couple of minutes.
  6. Slowly pour in the chicken broth, stirring continuously to avoid lumps, until you achieve a creamy sauce. Add the chicken back into the skillet, then season with salt and pepper and let it simmer for about 15 minutes.
  7. Preheat the oven to 200 °C.
  8. Roll out the brisée pastry in a pie dish, pour in the chicken and carrot filling, and if you want, sprinkle with grated pecorino cheese.
  9. Cover with another layer of brisée pastry and seal the edges well. Make cuts on the surface to allow steam to escape.
  10. Brush the surface with beaten egg yolk to achieve an even browning.
  11. Bake the pie for about 30 minutes or until the surface is well browned.
  12. Let it rest for a few minutes before serving.
