Chocolate potato cake

The Chocolate Potato Cake is a fluffy American dessert that incorporates mashed potatoes into its preparation to make it more moist and dense. In Italy, the use of potatoes in desserts is not common, but there are traditional recipes such as “Gattò di patate”, although it does not contain chocolate. Nevertheless, I will try to give you the recipe for the Chocolate Potato Cake with an Italian touch, perhaps by suggesting the use of a good Italian dark chocolate.

Ingredients

  • 250 g of mashed potatoes (without salt or butter, cold)
  • 250 g of flour
  • 400 g of granulated sugar
  • 100 g of unsweetened cocoa powder
  • 1 packet of baking powder
  • 1/2 teaspoon of salt
  • 4 eggs
  • 240 ml of milk
  • 120 ml of vegetable oil
  • 1 teaspoon of vanilla extract
  • 150 g of coarse Italian dark chocolate, chopped

Preparation

  1. Preheat the oven to 180 °C and butter and flour a round 22-24 centimeters in diameter pan or a rectangular pan.
  2. In a large bowl, sift together the flour, cocoa, baking powder, and salt.
  3. In another bowl, beat the eggs with the sugar until the mixture is frothy and light. Add the mashed potatoes and mix well.
  4. Fold the dry ingredient mixture into the egg and sugar mixture alternately with the milk and oil, starting and ending with the dry ingredients. Add the vanilla extract and mix until well combined.
  5. Add the chopped dark chocolate to the batter and mix gently.
  6. Pour the batter into the prepared pan and level the surface.
  7. Bake in the oven for about 50-60 minutes or until a toothpick inserted in the center of the cake comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer the cake onto a wire rack and let it cool completely before serving.

You could accompany this cake with a dusting of powdered sugar or a chocolate ganache. In Italy, it could be served with a small glass of sweet liquor, such as Vinsanto or Amaretto, which complement the deep flavor of chocolate well.
