Double Chocolate Mud Cake

Ingredients
- 200 g of good quality dark chocolate
- 200 g of butter
- 250 g of granulated sugar
- 150 ml of water
- 2 teaspoons of instant coffee (optional)
- 150 ml of milk
- 2 eggs
- 1 teaspoon of vanilla extract
- 200 g of self-raising flour (or all-purpose flour with a teaspoon of baking powder)
- 30 g of cocoa powder
For the chocolate ganache:
- 200 ml of fresh cream
- 200 g of good quality dark chocolate
Preparation
- Preheat the oven to 160 °C and prepare a cake pan by buttering and flouring it, or lining it with parchment paper.
- Break the dark chocolate into small pieces and put it in a pot along with the butter, sugar, water, and instant coffee. Heat the mixture over medium-low heat, stirring until all the ingredients are completely melted.
- Remove the mixture from the heat and allow it to cool slightly. Add the milk, eggs, and vanilla extract, mixing well to incorporate.
- Sift the flour and cocoa powder and gently fold them into the liquid mixture until you get a smooth batter.
- Pour the batter into the prepared pan and bake in the oven for about 1 hour or until a toothpick inserted into the center of the cake comes out clean, but the cake should still remain moist inside.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to finish cooling.
For the ganache:
- Heat the fresh cream in a pot until it almost boils.
- Remove the cream from the heat and add the broken-up dark chocolate, stirring until you get a smooth and homogeneous cream.
- Let the ganache cool slightly before spreading it over the cooled cake.
