Preparation

  1. For the shortcrust pastry: Put the flour, icing sugar, and cold butter cut into small pieces into a food processor. Run the food processor until you get a sandy mixture. Add the egg, vanilla, and a pinch of salt. Continue to work until you form a smooth dough. Wrap the dough in cling film and let it rest in the fridge for at least 30 minutes.
  2. Preheat the oven to 180°C. Roll out the dough to a thickness of about 5 mm and cut out the desired shapes using molds or a sharp knife. Place the shapes on a baking sheet lined with parchment paper and bake for about 10-15 minutes or until lightly golden. Allow cooling completely.
  3. For the cream: In a bowl, whip the fresh cream with the icing sugar and vanilla until it is firm. In another bowl, soften the mascarpone with a spatula or spoon. Gently fold the whipped cream into the mascarpone, moving the spatula from the bottom up to avoid deflating the mixture.
  4. Assemble the Cream Tart by alternating a layer of shortcrust pastry and one of cream. Use a pastry bag to evenly spread the cream over the layers.
  5. Decorate with fresh fruit, edible flowers, and a dusting of icing sugar before serving.
