Tomato Puff Pastry

Tomato Puff Pastry is a simple and tasty dish, and here I propose a classic Italian version.

Ingredients

  • 1 rectangular roll of puff pastry
  • 2-3 ripe tomatoes
  • 1 buffalo mozzarella (or fiordilatte)
  • Dried oregano to taste
  • Salt to taste
  • Extra virgin olive oil to taste
  • A few leaves of fresh basil (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Unroll the puff pastry onto a baking sheet lined with parchment paper.
  3. Wash the tomatoes and slice them not too thinly.
  4. Drain the mozzarella and slice it or cut it into cubes, according to your preference.
  5. Arrange the tomato slices on the puff pastry, leaving a small border along the edges.
  6. Add the mozzarella slices (or cubes) amongst the tomato slices.
  7. Sprinkle with a pinch of salt and dried oregano to taste.
  8. Drizzle everything with a thread of extra virgin olive oil.
  9. Bake for about 20-25 minutes or until the pastry is golden and crispy.
  10. Once baked, if you like, add a few leaves of fresh basil for a touch of freshness and flavor.

Allow it to cool for a few minutes before serving. This puff pastry can be a great appetizer or a main dish if accompanied by a fresh green salad.
