Tomato Lasagna Pie

The tomato lasagna pie is a creative and appetizing variant of a classic Italian dish. It is a perfect recipe for reinventing lasagna in a less traditional way. Here’s the recipe for you:

Ingredients

  • 250 g of egg lasagna (ready-made or to be cooked)
  • 500 ml of tomato puree
  • 1 small onion
  • 2 cloves of garlic
  • 250 g of ricotta
  • 200 g of diced mozzarella
  • 100 g of grated Parmesan cheese
  • 200 g of ground meat (optional for a richer version)
  • Extra virgin olive oil to taste
  • Fresh basil to taste
  • Salt and pepper to taste
  • Nutmeg to taste (for the ricotta)
  • Butter for greasing the pan

Preparation

  1. Start by preparing the sauce. Finely chop the onion and garlic and sauté them in a pan with a drizzle of extra virgin olive oil until they become transparent. If you have chosen to add ground meat, add it at this time and fry until well browned.
  2. Pour the tomato puree into the pan, add salt and pepper to taste, and cook over medium-low heat for about 20 minutes. At the end of cooking, add the crumbled fresh basil.
  3. In the meantime, in a bowl, mix the ricotta with a pinch of salt, pepper, and nutmeg to taste, until you obtain a homogeneous mixture.
  4. If you are using lasagna that requires cooking, boil them as indicated on the package, then drain and arrange them on a clean cloth to dry.
  5. Take a round baking dish and lightly grease it with butter. Start creating the layers of your savory pie: put a layer of lasagna at the bottom, then a layer of tomato sauce, a few spoonfuls of ricotta, and a sprinkling of Parmesan and diced mozzarella.
  6. Repeat the layers until the dish is full, ending with a sprinkling of Parmesan.
  7. Bake in a preheated oven at 180 °C (356 °F) for about 30-40 minutes, until the surface is golden and crispy.
  8. Let the tomato lasagna pie rest for a few minutes before serving.

This savory pie can be served either as a single dish or as a main course in a dinner. You can customize the recipe by adding layers of grilled vegetables, like zucchini or eggplants, for a lighter and summery touch. Enjoy your meal!
