Tomato and Basil Bruschetta

Preparation

  1. Begin by toasting the bread lightly in the oven or on a grill. If using the oven, preheat it to 200°C and bake the slices of bread until they become crispy and lightly golden.
  2. Meanwhile, wash the tomatoes and dice them after removing the seeds. Place them in a bowl.
  3. Add a drizzle of extra virgin olive oil, salt, and pepper to taste to the diced tomatoes and mix well.
  4. Wash and dry the basil leaves, then tear them by hand and add to the tomatoes. Basil torn by hand rather than cut with a knife retains a fresher and more intact flavor.
  5. When the bread is toasted, gently rub a garlic clove on one side of the slice to flavor it.
  6. Arrange the seasoned tomatoes on the slices of warm bread, making sure to evenly distribute the dressing.
  7. Finish with another drizzle of raw extra virgin olive oil and, if desired, an additional sprinkle of fresh basil.
