Tofu Nuggets

Tofu nuggets are a delicious plant-based alternative to traditional chicken nuggets and can be prepared in an Italian style by adding some breadcrumbs flavored with herbs such as oregano and basil. Here is the recipe:

Ingredients

  • 400 g of tofu
  • 100 g of chickpea flour (or all-purpose flour if you do not have gluten-free requirements)
  • 150 ml of sparkling water
  • 2 tablespoons of nutritional yeast flakes
  • 1 teaspoon of garlic powder
  • 1 teaspoon of smoked paprika
  • Salt to taste
  • Pepper to taste
  • Breadcrumbs flavored with dried oregano and basil
  • Extra virgin olive oil or other oil for frying

Preparation

  1. Drain the tofu well and pat it dry with some kitchen paper. Then cut it into cubes or strips, depending on your preference.
  2. In a bowl, mix the chickpea flour with the sparkling water, nutritional yeast flakes, garlic powder, smoked paprika, salt, and pepper to create a smooth batter.
  3. Prepare a plate with plenty of flavored breadcrumbs.
  4. Dip the tofu pieces in the batter, making sure they are well covered, and then roll them in the breadcrumbs, pressing lightly to ensure the coating sticks.
  5. Heat oil in a frying pan, and once it has reached the right temperature, fry the tofu nuggets until they are golden and crispy on all sides.
  6. Once cooked, transfer them to a plate lined with kitchen paper to absorb the excess oil.
  7. Serve your hot tofu nuggets, perhaps with a tomato and basil sauce or with a vegan mayonnaise.
