Tiramisu with Chocolate Cream

Chocolate Tiramisu is a mouthwatering variation of the classic Tiramisu. Let’s see how to prepare it.

Ingredients

  • 250 g of mascarpone
  • 100 g of sugar
  • 3 large eggs (yolks and whites separated)
  • 300 g of ladyfingers
  • 200 ml of strong, cooled coffee
  • 100 g of dark chocolate
  • Unsweetened cocoa powder (for dusting)
  • Salt (a pinch to whip the egg whites)

Preparation

  1. Start by preparing the coffee and let it cool down.
  2. Separate the yolks from the egg whites. Remember that the whites must be well-separated without any traces of yolk to whip properly.
  3. Melt the chocolate in a double boiler or in the microwave, making sure to stir until it becomes a smooth mixture. Let it cool down slightly.
  4. In the bowl with the egg yolks, add the sugar and beat with an electric mixer or by hand until you get a light and foamy mixture.
  5. Combine the yolk and sugar mixture with the mascarpone and continue to mix until you get a smooth and homogeneous cream.
  6. Add the lukewarm melted chocolate to the mascarpone cream and gently mix to combine well.
  7. Whip the egg whites into firm peaks with a pinch of salt and fold them gently into the mascarpone and chocolate cream, using a spatula and movements from the bottom up so as not to deflate the mixture.
  8. In a serving dish, arrange a layer of ladyfingers quickly dipped in the cold coffee.
  9. Spread a layer of mascarpone and chocolate cream on top.
  10. Continue layering ladyfingers and cream, ending with the chocolate cream.
  11. Let the Tiramisu rest in the fridge for at least 3-4 hours, preferably overnight.
  12. Before serving, dust the surface with unsweetened cocoa powder.

Chocolate Tiramisu is a variant of the classic Italian dessert that knows how to win over the most indulgent thanks to the chocolatey touch. The chocolate adds a touch of intensity and contrasts with the sweetness of the mascarpone cream, creating a pleasant balance of rich flavors.

Note:

  • You can further enrich it by replacing the coffee with a chocolate liqueur or by adding chocolate chips to the mixture for a “stracciatella” effect.
  • For an even richer version, you can dust the tiramisu with chocolate shavings before serving.
