Ciambella semifreddo tiramisù

Ingredients
- 250 g of mascarpone
- 100 g of powdered sugar
- 3 large eggs (with yolks and whites separated)
- 200 ml of whipping cream
- 1 small cup of cooled espresso coffee
- 200 g of ladyfingers
- Unsweetened cocoa powder for dusting
- 1 pinch of salt
- Coffee liqueur or marsala (optional)
- Grated dark chocolate or chocolate chips (for garnish)
Preparation
- Start by carefully separating the yolks from the egg whites.
- Whisk the egg yolks with the powdered sugar until they become frothy and light. Add the mascarpone to the yolk and sugar mixture, and mix gently until you obtain a smooth cream.
- In a separate bowl, whip the whipping cream until stiff.
- Beat the egg whites with a pinch of salt until they form stiff peaks. Ensure that the bowl is clean and dry to achieve the best results.
- Gently fold the whipped cream and whipped egg whites into the mascarpone cream, mixing delicately from top to bottom so as not to deflate the mixture.
- In a small bowl, mix the cold coffee with a little coffee liqueur or marsala if you wish to add an alcoholic touch (this step is optional).
- Quickly dip the ladyfingers in the coffee without soaking them too much to prevent them from breaking.
- Line a silicone donut mold or a springform bundt pan with clear film. Arrange a layer of soaked ladyfingers on the bottom and along the edge of the mold.
- Pour half of the mascarpone cream into the mold, add another layer of ladyfingers, and cover with the remaining cream.
- Level the surface with a spatula and put the ciambella in the freezer for at least 4 hours or until it is well set.
- Before serving, remove the ciambella from the freezer, take off the mold and film, and let it soften for a few minutes.
- Dust with unsweetened cocoa powder and garnish with grated dark chocolate or chocolate chips before serving.
