Semifreddo al tiramisù
17/11/2023The Tiramisù Semifreddo is a fresh and delicious variation of the classic Tiramisù. Here’s how to make it:
Ingredients
- 250 g of mascarpone cheese
- 100 g of powdered sugar
- 3 eggs (with yolks and whites separated)
- Ladyfingers to taste (about 200 g, depending on the size of the container)
- Strong coffee to taste (for soaking the ladyfingers)
- Unsweetened cocoa powder (for dusting)
- Liqueur, such as Marsala or Amaretto, optional (to add to the coffee)
- Whipping cream (optional, about 100 ml if you desire a softer texture)
Preparation
- Start by separating the egg yolks from the whites.
- Beat the yolks with powdered sugar until you have a light and fluffy mixture.
- Add the mascarpone to the yolks and continue mixing until the mixture is homogeneous.
- In a separate bowl, beat the egg whites until stiff peaks form.
- If using whipping cream, whip it separately until it is firm.
- Gently fold the stiff egg whites into the mascarpone and yolk mixture, using a spatula and movements from the bottom up to avoid deflating the mixture.
- (Optional) Also fold in the whipped cream using the same method.
- Prepare a loaf pan or mold lined with plastic wrap.
- Quickly dip the ladyfingers in the coffee (optionally flavored with your choice of liqueur) and arrange them on the bottom of the mold to create a first layer.
- Pour half of the mascarpone mixture over the ladyfingers.
- Add another layer of soaked ladyfingers and cover with the remaining mascarpone mixture.
- Level the surface and place the semifreddo in the freezer for at least 4 hours, or until it has solidified.
- Before serving, flip the mold onto a plate and gently remove it. Remove the plastic wrap.
- Dust the top with unsweetened cocoa powder.
Let the semifreddo sit at room temperature for about 10-15 minutes before cutting it, to facilitate slicing.
