Tiramisu Cheesecake

The tiramisu cheesecake is an interesting mix between the traditional cheesecake and the characteristic flavors of Italian tiramisu. Here’s how to prepare it:

Ingredients

  • 250 g of dry biscuits (such as savoiardi)
  • 100 g of melted butter
  • 500 g of mascarpone
  • 250 g of cream cheese like Philadelphia
  • 100 g of icing sugar
  • 2 large eggs
  • 1 small cup of cold espresso coffee
  • 30 ml of coffee liqueur (such as Marsala or Tia Maria)
  • Cocoa powder for dusting
  • Chocolate coffee beans for decoration (optional)

For the topping:

  • 250 ml of whipping cream
  • 2 tablespoons of icing sugar

Preparation

  1. Finely grind the biscuits and mix them with the melted butter. Press this mixture evenly into the bottom of a springform pan that you’ve previously lined with parchment paper. Refrigerate for at least 30 minutes so that it hardens.

  2. For the cheesecake filling, in the bowl of a mixer, combine the mascarpone, cream cheese, icing sugar, eggs, coffee, and coffee liqueur. Mix until you have a smooth mixture.

  3. Pour the filling over the biscuit base and level well with a spatula.

  4. Bake in a preheated oven at 160°C for about 1 hour or until the center is almost completely set but still slightly wobbly.

  5. Once cooked, let the cheesecake cool in the turned-off oven with the door slightly open, to avoid temperature shocks that can cause cracks on the surface.

  6. When it is completely cooled, put the cheesecake in the refrigerator and let it rest for at least 4 hours, better if overnight.

  7. Before serving, whip the cream with the icing sugar and spread a thin layer on the surface of the cheesecake.

  8. Dust with cocoa powder and decorate with chocolate coffee beans.

Interesting Facts

Even though this cheesecake features the flavors of tiramisu, remember that the consistency will be the creamy and compact one typical of cheesecakes, not the soft and fluffy one of tiramisu. The biscuit base recalls the element of tiramisu where savoiardi biscuits are soaked in coffee.

If you want to pair a wine with this dessert, you could try a slightly fruity passito wine that contrasts with the richness of the dessert.
