Tiramisu cake

Here is the recipe for a delicious Tiramisu Cake. This dessert combines the classic taste of tiramisu with the structure of a cake, for an elegant and mouthwatering result.

Ingredients

For the sponge cake:

  • 4 eggs
  • 120g of sugar
  • 120g of 00 flour
  • A pinch of salt

For the mascarpone cream:

  • 500g of mascarpone
  • 4 very fresh eggs
  • 120g of sugar
  • Strong coffee as needed (for dipping)

To finish:

  • Unsweetened cocoa powder

Preparation

  1. Sponge cake: Beat the eggs with the sugar and a pinch of salt until you get a light and fluffy mixture. Gently fold in the sifted flour, being careful not to deflate the mixture. Pour it into a buttered cake pan or lined with parchment paper and bake in a pre-heated oven at 180 °C (356 °F) for about 20 minutes. Let it cool and then cut horizontally to obtain two disks.

  2. Mascarpone cream: Separate the yolks from the whites. Beat the yolks with the sugar until they’re fluffy, then add the mascarpone and mix until you get a smooth cream. Whip the egg whites until stiff peaks form and gently fold them into the mascarpone mixture.

  3. Assembling: Prepare strong coffee and let it cool. Dip the sponge cake disks in the coffee without soaking them too much. Place one disk as a base on a plate, spread half of the mascarpone cream on top, lay the second disk and cover with the rest of the cream.

  4. Finishing: Dust the unsweetened cocoa powder over the surface before serving the cake.
