Tiramisu Doughnut

The tiramisu doughnut is a reinterpretation of the classic tiramisu as a baked sweet. Here is the recipe to prepare it:

Ingredients

  • 3 eggs
  • 250 g of sugar
  • 250 g of type 00 flour
  • 100 ml of seed oil
  • 100 ml of strong coffee, already sweetened and cooled
  • 1 packet of baking powder for sweets
  • 1 pinch of salt
  • Unsweetened cocoa powder to garnish

For the mascarpone cream:

  • 250 g of mascarpone
  • 2 egg yolks
  • 30 g of sugar
  • 1/2 small glass of Marsala or a liqueur of your choice (optional)

Preparation

  1. In a large bowl, whip the egg yolks with the sugar until you get a light and fluffy mixture.
  2. Gradually add the oil and the cold coffee, continuing to stir.
  3. Incorporate the flour previously sifted with the baking powder and salt, mixing gently to avoid the formation of lumps.
  4. In a separate bowl, beat the egg whites until stiff and fold them into the mixture of yolks, sugar, oil, and coffee, mixing from the bottom up to not deflate them.
  5. Pour the mixture into a doughnut mold previously greased and floured.
  6. Bake at 180 °C for about 35-40 minutes or until a skewer inserted into the sweet comes out dry.
  7. Let the doughnut cool before proceeding with the cream.

For the mascarpone cream:

  1. Whip the yolks with the sugar until you get a light and fluffy mixture.
  2. Add the mascarpone and continue to whip until you obtain a smooth and homogeneous cream. If you wish, you can add a little Marsala or liqueur of your choice.
  3. Once the doughnut is cold, cut the top to level it and spread the surface with the mascarpone cream.
  4. Close with the top part of the doughnut you cut and dust with the unsweetened cocoa.
