Tiramisù

Tiramisu is a spoon dessert from Italy, known and appreciated all over the world. Here is the traditional recipe:

Ingredients

  • 6 very fresh eggs at room temperature
  • 500 g of mascarpone
  • 120 g of granulated sugar
  • 300 g of ladyfingers
  • Espresso coffee as needed, sweetened to taste
  • Unsweetened cocoa powder for dusting

Preparation

  1. First, prepare the espresso coffee and let it cool down.
  2. Separate the yolks from the whites. Whip the yolks with the sugar until you get a light and fluffy mixture.
  3. Add the mascarpone to the yolks, and work the mixture until it becomes homogeneous.
  4. In another bowl, whip the egg whites until stiff.
  5. Gently fold the whipped whites into the mixture of yolks and mascarpone, trying not to deflate them.
  6. Quickly dip the ladyfingers in the cold coffee, being careful not to soak them too much.
  7. Arrange a layer of the soaked ladyfingers at the bottom of a baking dish or bowl.
  8. Cover with a layer of the mascarpone and yolk mixture.
  9. Continue by alternating layers of ladyfingers and cream, ending with the cream.
  10. Put the tiramisu in the refrigerator for at least 3-4 hours, better if overnight.
  11. Before serving, dust the tiramisu with unsweetened cocoa powder.

The name “tiramisù” means “pick me up”, an invitation to improve the spirit thanks to the goodness and energy that this dessert can provide. Its origins are contested among various Italian regions, but it is unanimously recognized as one of the excellences of Italian pastry.
