Three Tomato Soup

The Three Tomato Soup is a dish that combines different types of tomatoes to create a rich and varied taste experience. Here’s how to prepare it:

Ingredients

  • 250 g of ripe tomatoes
  • 150 g of cherry tomatoes
  • 150 g of grape tomatoes
  • 1 medium onion
  • 2 cloves of garlic
  • 1 liter of vegetable broth
  • A few basil leaves
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Bread croutons (optional)

Preparation

  1. Wash all the tomatoes and cut the ripe tomatoes into chunks, the cherry tomatoes in half, and leave the grape tomatoes whole.
  2. Peel and finely chop the onion, then chop the garlic as well.
  3. In a large saucepan, heat some extra virgin olive oil and sauté the onion and garlic until translucent.
  4. Add the ripe tomatoes and cook for about 5 minutes.
  5. Pour the vegetable broth into the saucepan and bring to a boil.
  6. Add the cherry tomatoes and grape tomatoes, then lower the heat and simmer for about 20 minutes.
  7. Season with salt and pepper to taste, and add the torn basil leaves.
  8. You can choose to serve the soup as is for a more rustic version with pieces of tomato, or blend with an immersion blender for a smoother texture.
  9. Serve hot, perhaps with a sprinkle of Parmesan and toasted bread croutons for added crunch.
