Preparation

  1. Bring a pot of salted water to a boil and cook the wheels as indicated on the package, until they are al dente.
  2. Meanwhile, wash and cut the zucchini into small cubes and the bell peppers into thin strips or cubes.
  3. Heat the oil in a large pan and add the zucchini and bell peppers. Sauté over medium-high heat until they are slightly golden and tender.
  4. Add the drained and rinsed corn and let it flavor with the vegetables for a couple of minutes. Season with salt and pepper.
  5. When the pasta is cooked, drain it well and add it to the pan with the vegetables. Gently mix to combine the ingredients.
  6. If desired, sprinkle the dish with chopped fresh basil and/or grated parmesan cheese before serving.

You can enrich the dish with other ingredients of your choice, like halved cherry tomatoes, Taggiasca olives, or a touch of pesto for an even more Italian flavor.
