Teff Crackers

Teff crackers are an excellent option for those looking for a healthy and gluten-free snack. Teff is an Ethiopian grain full of nutrients and naturally gluten-free. Here is the recipe for making teff crackers:

Ingredients

  • 1 cup of teff flour
  • 1/4 cup of water
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of salt
  • Spices to taste (such as rosemary, thyme, chili powder, etc.)

Preparation

  1. Preheat the oven to 180 °C (356 °F) and prepare a baking sheet by lining it with parchment paper.
  2. In a bowl, mix the teff flour with salt and chosen spices.
  3. Add the olive oil and water to the spiced flour. Mix until a homogeneous dough is formed.
  4. If the dough is too dry, add a little more water; if too sticky, add a little more teff flour.
  5. Roll out the dough on the prepared baking sheet, trying to get an even thickness of about 2-3 mm.
  6. With a knife or a pastry cutter, score the dough into squares or rectangles to facilitate breaking the crackers once baked.
  7. Bake the crackers for about 20-30 minutes or until they are crispy and lightly golden around the edges.
  8. Remove the crackers from the oven and let them cool completely before breaking them along the scored lines.

Trivia

Teff is an extremely versatile grain and is used in Ethiopia to prepare injera, a type of soft and fermented bread that accompanies many traditional dishes. Teff crackers can be a modern reinterpretation that uses this ancient grain in a more Western context.

If you want to add an Italian touch, you could sprinkle the crackers with a pinch of grated Parmesan before baking them, or serve them with a good Italian cheese as a snack.
