Teff Cookies

Teff cookies are a great gluten-free alternative to traditional cookies. Teff flour is rich in fiber, proteins, and minerals. Let’s see how to prepare them:

Ingredients

  • 200 g of teff flour
  • 100 g of cane sugar or coconut sugar
  • 100 g of butter at room temperature or vegetable margarine
  • 1 egg (or egg substitute for a vegan version)
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 1/2 teaspoon of baking powder
  • (Optional) Chocolate chips or nuts as desired

Preparation

  1. In a bowl, mix teff flour with sugar, salt, and baking powder.
  2. Add the butter and work the mixture with your hands or with the help of a mixer until it reaches a sandy consistency.
  3. Incorporate the egg and vanilla extract and knead until the mixture is homogeneous. If you wish, at this point you can add chocolate chips or chopped nuts.
  4. Form a ball with the dough and wrap it in cling film. Let it rest in the refrigerator for at least 30 minutes.
  5. Heat the oven to 180 °C.
  6. Roll out the dough on a lightly floured surface until it is about 5 mm thick.
  7. Use cookie cutters to give your cookies the desired shape and arrange them on a baking tray lined with parchment paper.
  8. Bake for about 10-12 minutes or until they become golden around the edges.
  9. Let the cookies cool on a rack before serving.

Remember that cooking time can vary based on the thickness and size of the cookies, so keep an eye on them while they are in the oven.
