Ingredients
- 250 g of all-purpose flour
- 125 g of soft butter
- 100 g of icing sugar
- 1 large egg
- 1 pinch of salt
- Vanilla essence or the grated zest of 1 lemon
- Dark chocolate for coating
- Optional spices to taste (e.g., cinnamon, ginger powder)
Preparation
- In a bowl or on a pastry board, sift the flour and add the butter in small pieces, working quickly with your fingertips until you get a sandy mixture.
- Add the icing sugar, salt, and vanilla essence or lemon zest. Mix the ingredients well.
- Incorporate the egg and knead until you get a smooth and uniform dough. If you wish, you can add spices to taste at this point.
- Form a ball with the dough, wrap it in plastic wrap, and put it in the refrigerator for about 30 minutes, so it cools down and becomes easier to work with.
- Preheat the oven to 180 °C.
- Roll out the dough on a lightly floured surface to a thickness of about 5 mm.
- Cut the dough into rectangles of about 6 cm x 4 cm and, using a straw or a small knife, make a hole in one corner to simulate the tea bag.
- Transfer the cookies to a baking sheet lined with parchment paper and bake for 10-12 minutes or until the edges begin to turn golden brown slightly.
- Let the cookies cool on a wire rack.
- Meanwhile, melt the dark chocolate in a double boiler.
- Dip the base of the cooled cookies in the chocolate, simulating the part of the tea bag that is usually immersed in hot water.
- Place the cookies on parchment paper and let the chocolate solidify.
If you want, you can add a string or a ribbon to complete the “tea bag” look.
