Ingredients
- 6 eggs
- 100 g of diced speck
- 200 g of fresh sausage
- 50 g of grated cheese (Parmesan or Pecorino)
- Salt and pepper to taste
- Extra virgin olive oil
- Butter (optional)
- Chopped parsley (optional for garnish)
- 1 clove of garlic (optional)

In a frying pan, heat a drizzle of extra virgin olive oil with a whole clove of garlic if desired to flavor the sauté. Add the crumbled sausage after removing the casing, and brown it until it is golden and crispy.

Once the sausage is cooked, remove the garlic and add the diced speck, allowing it to brown lightly for a few minutes until it becomes crispy.

In a large bowl, beat the eggs with a pinch of salt and pepper and the grated cheese until smooth. If you like, you can also add some herbs such as chopped parsley.
